Grapefruit salad and spinach
INGREDIENTS
1 lb spinach
½ red onion, minced
3 red grapefruits
Dressing
2 tsp poppy seeds, toasted
3 cloves garlic, minced
2 tbsp white wine vinegar
2 tbsp extra virgin olive oil
1 tbsp mustard
½ tsp honey
to taste salt and pepper
INSTRUCTIONS

8 servings
1. In a large bowl, combine spinach, onion and mix well.
2.Wo rking over a small bowl to catch the juice, dispose the grapefruit supremes.
3. Reserve the juice.
4. Cut into pieces and supreme add to salad.
5. Mix well and refrigerate.
Dressing
6. In a blender, combine all ingredients except poppy seeds, and beat until smooth.
7. Salt and pepper to taste.
8. Pour dressing over salad and mix well.
9. Place in salad plates and garnish with poppy seeds.
