Skewered scallops and grilled vegetables
Cook the scallops as little as possible to keep them soft.
Before you fry the scallops dry with absorbing paper and they will color better!
Adapt to the tastes of the family including children who are more difficult.

INGREDIENTS
Flavored oil:
1/3 cup olive oil
1 lemon, juice and zest
1 tablespoon balsamic vinegar from Modena
2 cloves garlic, minced
To taste salt and freshly ground pepper
Skewers :
3 cups assorted vegetables sliced : zucchini, peppers, mushrooms, asparagus, onions
4 skewers of scallops
2 tablespoons chopped fresh chives
INSTRUCTIONS
Preparation time: 10 min
Cooking time: 8 min
Total: 18 min
4 servings
1. Preheat barbecue to medium-high.
2. In a bowl, combine all ingredients of flavored oil. Reserve.
3. Brush lightly the grill with vegetable oil.
4. Make skewers vegetables, place on hot grill.
5. Brush during cooking with flavored oil.
6. Grill the scallops 3 to 4 minutes per side.
7. Brush regularly during cooking with flavored oil.
8. Place on vegetables, skewered scallops, sprinkle with chives and serve
