Turkey cutlets with Parmesan
This recipe is equally delicious with veal cutlets, pork or chicken.
Courses: Main Dish
Main Ingredients: Cheese, Tomatoes, Turkey
INGREDIENTS
1/2 cup Parmesan cheese, grated
1/2 cup bread crumbs
4 x 4 oz turkey cutlets
1/3 cup flour
2 eggs, lightly beaten
Portion of butter
Portion of organic canola oil
3 cups hot tomato sauce and basil
1 lb. mozzarella cheese, sliced
INSTRUCTIONS
Preparation time: 15 min
Rest: 10 min
Cooking time: 8 min
Total: 33 min

1. In a bowl, combine the Parmesan with the breadcrumbs.

2. Coat the turkey cutlets and dip them in eggs.

3. Coat with bread crumbs. Gently shake off excess.

4. Cool on rack 10 minutes.

5. In a skillet, heat butter and oil.

6. Fry over medium-high heat, cutlets 1-2minutes on each side and cook until the juices run clear.

7. In a shallow rectangular baking dish, layer half the spaghetti sauce.

8. Arrange the slices in alternating them a slice of mozzarella between each scallop.

9. Pour around the meat, spaghetti sauce.

10. Brown in oven.
