INGREDIENTS
1 romaine lettuce, shredded
2 tomatoes, cut into quarters
1 each red and green peppers, diced
3 boiled eggs, sliced
6 oz canned tuna, drained, flaked
1/2 cup shredded Cheddar cheese
1/2 cup pitted black olives, halved
Vinaigrette
1/2 cup extra virgin olive oil
3 tablespoons white wine vinegar
To taste, salt and pepper
INSTRUCTIONS

4 servings
1. In a bowl, combine all ingredients.
2. Add dressing and mix well.
3. Cover and let stand in refrigerator 15 minutes before serving.
