Leek Soup
The earth and sand tend to seep between the many leaves of the leek. For cleaning, make an incision on the half of its length after removing the sheets from above. Then pass under cold water, taking care to remove the leaves. |

INGREDIENTS
4 tsps. olive oil extra virgin
1 medium onion, chopped
1 large clove garlic, minced
2 cups leek, thinly sliced
2 cups potatoes, peeled and cubed
1 zucchini, sliced
3 cups chicken broth
2 cups milk
1 teaspoon dried chervil
salt and pepper
INSTRUCTIONS
Preparation time: 15 min
Cooking time: 35 min
Total: 50 min
4 servings
1. In a saucepan, heat oil and fry the vegetables for 2 minutes.
2. Add chicken broth and bring to boil.
3. Cover and simmer 25 minutes.
4. In food processor, puree the vegetables.
5. Return to saucepan and add milk and spices.
6. Heat 8-10 minutes until smooth desired.
7. Salt and pepper to taste.
