Creamy crab and coconut milk
You can replace the crab with shrimp or cooked chicken and garnish with rice vermicelli.
Great for: Freezing, Low Fat

Main Ingredients: Fish & Seafood, Vegetables
INGREDIENTS
10 Oz chicken broth
1 cup coconut milk
4 Oz canned crabmeat
2 c. tablespoons fresh lime juice
1/2 red pepper, cut into julienne strips
ground pepper
4 scallions, chopped
1/4 cup chopped fresh cilantro
INSTRUCTIONS
Preparation time: 5 min
cooking time: 5 min
4 servings

1. In a saucepan, bring chicken broth and coconut milk.

2. Add crab meat, lime juice and red pepper

3. Cook 2 min. Pepper to taste.

4. Serve in soup bowls

5. Garnish with green onions and cilantro.
