Stuffed Tomatoes
An easy dish to prepare ... and warm!
Great for: Leftovers, Quick and Easy, School Lunches

Main Ingredients: Beef, Rice, Tomatoes
INGREDIENTS
8 fresh tomatoes
1 c. Tbsp sunflower oil
1 green onion, finely chopped
1/2 stalk celery, chopped
1 clove garlic, minced
1/2 pound lean ground beef
1 cup crushed tomatoes
3/4 cup cooked rice
1 c. Tsp oregano
1/2 cup cheese, grated
Salt and pepper
Fresh parsley for decoration
INSTRUCTIONS
4 servings

1. Scoop out the tomato flesh but leave enough so that they keep their shape.

2. Heat oil in a saucepan and add onion, celery and garlic.

3. Cook 3 to 4 minutes over medium heat.

4. Add meat and season. Cook 3 to 4 minutes.

5. Add crushed tomatoes and rice.

6. Mix well and cook 6-7 minutes over medium heat.

7. Stuff the tomato mixture and place on an oiled roasting pan.

8. Sprinkle with cheese and bake 25 minutes at 350 ° F.
