Black Beans and Rice

Great for: Low Fat, Quick and Easy
Courses: Side Dish
Main Ingredients: Beans & Peas, Rice, Vegetables
INGREDIENTS
1 teaspoon olive oil
1 onion, chopped (skipped this)
2 cloves garlic, minced
3/4 cup uncooked white rice
1 1/2 cups low sodium, low fat vegetable broth (used chicken, it's what I had)
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
3 1/2 cups canned black beans, drained (I didn't measure, just used two cans)

INSTRUCTIONS
1. In a stockpot over medium-high heat, heat the oil.

2. Add the onion and garlic and saute for 4 minutes.

3. Add the rice and saute for 2 minutes.

4. Add the vegetable broth, bring to a boil, cover and lower the heat and cook for 20 minutes.

5. Add the spices and black beans.
