Scrambled Eggs with Asparagus
INGREDIENTS
8 Oz of fresh green asparagus
8 eggs
2 sprigs of fresh chopped parsley
2 sprigs of fresh chopped tarragon
3 tbsp olive oil
Salt and pepper
grated cheese
INSTRUCTIONS
For 4 persons
Preparation : 5 minutes
Cooking : 15 minutes
1. Remove the tough ends of the asparagus and cut in half.
2. Cook in boiling salted water for 10 minutes.
3. Drain and rinse with cold water. Let sit.
4. Break the eggs into a large bowl and beat with a pinch of salt and pepper.
5. Add tarragon and parsley and mix well.
6. Heat the olive oil in a pan and pour in eggs.
7. Stir with a wooden spatula until the eggs are scrambled.
8. Sprinkle with grated cheese.
9. Mix the eggs with asparagus reserved.
10. Serve hot.
