Breakfast to be active
A very nice breakfast for an awakening of late winter. Do not abuse it because it's still very calories!
Courses: Breakfast
Main Ingredients: Eggs, Grains & Cereals, Tomatoes
INGREDIENTS
-8 thin slices of bacon
-4 tomatoes
-1 tablespoon olive oil
-1 small bunch fresh parsley
-4 slices of bread
-8 eggs
-Oil for frying
-Salt and pepper



INSTRUCTIONS
For 4 people:
Preparation: 10 minutes
Cooking time: 10 minutes

1. Broil bacon in a non-stick pan until crisp. Keep warm.

2. Wash the tomatoes and cut into slices. Them back slightly in the olive oil. Add salt and pepper and drain.

3. Fry the parsley taking care not to burn. Toast the slices of bread and have one on each plate.

4. Fry the eggs to the dish and place on toast. Pepper eggs. Add the bacon and tomato slices.

5. Garnish with fried parsley. Serve at once.

Serve with coffee and freshly squeezed orange juice.
Instead of fried eggs, you can make scrambled eggs.
