Banana Nut Bread
Yield: 8 servings 2 loaves

Main Ingredients: Eggs, Fruit, Grains & Cereals
INGREDIENTS
- 2/3 cup oil
- 4 large eggs
- 2 cups mashed ripe bananas
- 2 cups flour
- 1 cups white sugar
- 1 cup brown sugar
- 1 (3 1/2 ounce) box vanilla instant pudding
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1 cup chopped pecans
INSTRUCTIONS
1. Preheat oven to 325°F.

2. Mix oil, eggs and mashed bananas.

3. Combine remaining ingredients and add to banana mixture.

4. Grease and flour pans, place on baking sheet.

5. Bake in a 2/ 9 x 5 x 3 inch pan 0r 4 mini loaves [mini's will take about 45 minutes] for 1 hour or until bread tests done.
