Sesame Pasta Chicken Salad
INGREDIENTS
-1 (16 ounce) package fettucini
-1/3 cup olive oil
-1/3 cup light soy sauce
-1/3 cup rice vinegar
-1 teaspoon sesame oil
-3 tablespoons white sugar
-1/2 teaspoon ground ginger
-1/4 teaspoon ground black pepper
-2 chicken breasts cooked and shredded
-3 or 4 chopped green onions
-1 cup frozen peas
INSTRUCTIONS
1. Bring a large pot of lightly salted water to a boil.
2. Add pasta, and cook for 8 to 10 minutes, or until al dente.
3. Drain pasta, and rinse under cold water until cool.
4. Transfer to a large bowl.
5. In a jar with a tight-fitting lid, combine olive oil, soy sauce, vinegar, sesame oil, sugar, ginger, and pepper.
6. Shake well.
7. Pour sesame dressing over pasta, and toss to coat evenly.
8.Gently mix in chicken, peas and green onions.
