Shephard's Pie
You can use ground beef, ground turkey or ground lamb.
Great for: Comfort Food
Courses: Main Dish
Main Ingredients: Beans & Peas, Cheese, Lamb, Potatoes, Soy, Tomatoes
INGREDIENTS
1.5 lbs of grnd lamb
1 small onion finely chopped
olive oil
1 clove of garlic, finely chopped (or you can by minced in the jar & throw in)
carrots (diced)
1/3 of a cup peas
2 tomatoes, roughly chopped
1 can of chicken or veggie broth
1 lb of potatoes
approx 2 tablespoons of milk (small amt, warmed to be added to whipped potatos)
-knob of butter
-1/3 cup of grated sharp cheddar cheese
-salt & pepper
-2 teaspoons of dark soy sauce (optional)
-1 tablespoon of tomato ketchup
-1 teaspoon or cornstarch or you can use flour if necessary

(you can omit any of the ingredients you don't like)
INSTRUCTIONS
1. Cook potatoes in a large pan of boiling water for 8-10 minutes or until tender

2. Heat 1 tablespoon of olive oil in a large frying pan & cook onion, garlic, carrot, and ground lamb for 3-4 minutes until well browned.

3. Stir in stock, tomato ketchup, and soy sauce. bring to a boil & simmer rapidly for 3-4 minutes.

4. Mix cornstarch or flour to a paste with a little bit of water & stir into pan with tomatoes & peas.

5. Bring back to a boil, stirring, until slightly thickened.,

6. Season with salt & pepper (i add some italian seasoning as well).

7. Drain the potatoes well & return to the pan.

8. Mash well, then beat in milk & butter until smooth & creamy. season with salt & pepper.

9. Preheat the brolier to high. spoon lamb mixture into a baking dish (glass or metal) & spoon over mash potatoes, making a criss cross pattern with a fork.

10. Sprinkle cheddar over & place until broiler for 3-5 minutes until cheese is melted & turning a golden brown.
