Cheesy Veggie Quesadilla
For a change of pace, we used feta cheese. But it's also fab with shredded mozzarella, Muenster, or mild Cheddar.
Great for: Everyday Cooking, Low Fat, Low Carb
Courses: Main Dish
Main Ingredients: Beans & Peas, Cheese
INGREDIENTS
1 can (15 oz.) black beans, rinsed and drained
½ cup mild salsa, plus extra for serving
8 small whole-wheat tortillas
½ cup chopped roasted red pepper
1 ripe avocado, chopped
1/3 cup crumbled feta cheese (we use mozzarella)
INSTRUCTIONS
Yield: 4 servings

1. Heat oven to 400°F.

2. In a medium bowl, mash together black beans and salsa.

3. Divide among 4 tortillas.

4. Top with red pepper, avocado, and feta.

5. Place remaining tortillas on top and sandwich together.

6. Place quesadillas on a large greased baking pan.

7. Spray quesadillas with vegetable cooking spray. Bake 10 minutes.

8. Cut into quarters and serve with extra salsa, if desired.
