Healthy Casserole
Does anyone have any good and healthy casserole recipes? I love casseroles because they are so easy to make and fast but full of butter or sodium any suggestions?

My mom used to make me a tuna casserole that wasn't all that healthy, but I have figured out how to modify it so that it is. It's easy, not the most gourmet but I loved it when I was little.

1 can tuna
1 pkg. maccaroni and cheese, prepared (you can leave out the butter, I usually do)
1 can cream of mushroom soup (they make low-fat, low-sodium)

You can add any veggies you want--sometimes I do cooked green beans, or peas, or broccoli, whatever floats your boat.

Mix all those things together, put in a casserole dish. My mom used to sprinkle it with potato chips (so darn good!) but you could do bread crumbs or just leave the topping out. Hopefully this is close to what you are looking for? It's hard to find a casserole that isn't artery-clogging. :)

Thank you this sounds really good. I love casseroles but I haven't found a healthy one. It does sound good with chips.
