These are the best nuggets ever!!
1 lb thin sliced chicken beast Baking sheet
24 or a little more saltine crackers large zipper bag
1 egg white large plate
1-2 tbl mustard knife
1-2 tbl ranch dressing it can be light large bowls
salt and light pepper fork for mixing
oil to coat pan measuring spoons

1. heat the oven to 400 and place aluminum foil in a cookie sheet lightly oil (if you have the non stick kind you won't have to use any oil at all)

2. (toddlers can help) crush the crackers in a zipper bag and put them on a large plate.

3. cut the chicken into 1 1/2 inch squares

4. (Toddlers can help) in the large bowl mix together the ranch egg white and mustard until well mixed. add the chicken and toss in mixtil coated.

5.( toddlers can help) press each chicken piece into the crackers until it's covered all over.

6.bake in the oven until the chicken is cooked about 15 mins. if you want to check the temp with a thermometer hold one nugget on each side it should be 165 degree.

I've tried these out on several children they are easy,fun,not oily, delicious,and don't even need a dipping sauce.It's in the " C is for cooking" cookbook although i did change some thing I think for the healhier.

I love this my husband and I were just talking about chicken nuggets and how we don't want our son to fall into the junk food craze. Thank you so much.

I do mine a little bit differently. Instead of "saltine crackers", I use "Idaho Mashed potato flakes"- the kind that come in a box. I also add "parmesan cheese" with "Chef Pauls" all natural spice mix.

I eliminate the ranch dressing. Dip chicken breast into egg batter, then into potato flakes with parmesan cheese, and bake at 350 degrees for about 20-25 minutes.

With cookie cutters, I cut out shapes on chicken. My kids love this and so does dad.
