veggies
So my guys are meat and potato people. I want my meat and starch but love veggies as well. I grew up with a garden and since we moved I'm not sure what grows up here differently than the South and I was 8 1/2 pregnant at planting season. I feel that I am limited with serving canned and frozen veggies constantly....we eat a lot of broccoli. Anyone have any veggie ideas or recipes so I can get my hubby and fil to eat them as well?

well unfortunately I wasnt raised with limited veggie options so I am learning to incorporate them now... I just pick a veggie I want to try i.e. eggplant then type that into the bettycrocker.com or kraftkitchen.com recipes and find dishes with them involved. So my family gets different veggies all year long :) Once I learn about them I try them in different ways! A recent family fave is stuffing our meatloaf recipe into bellpeppers, I saw that on the food network with Sunny Anderson... Good luck!

how funny i just cooked that for the first time last week. They liked it but want me to try my meatloaf recipe with it or just leave off the peppers and make meatloaf....Guys are so funny some times.Thanks for the suggestion. I've been wanting to try eggplant and found one recipe do you have any good eggplant recipes?

Hi there, I am new here. but have you hiding the veggies. One that my husband and daughter like is orange potatoes. Really it is carrot potatoes, boil up carrots with you potatoes for mashing and run the carrots and potatoes thru a food mill. You will have to see what seasons suit you best and the amouts of carrots that you prefer.

Also when slow cooking I always blend up an extra serving of veggies and beans t make a thicker base, that way even if my daughter avoid the black beans and she eats up all the soup I know she got some beans in her. Whch for me is important since I carb count for her.
