Yummy apple bread! Amanda sent me the recipe and it is seriously heavenly! I made some into muffins and they were delicious!

I have found a recipe for the best chili. It has unique ingredients and makes a TON. I filled my 7qt crockpot when i made this so be prepared.

It's that time of year for soup! Here's a yummy, low fat one. I made it last week and it was great.

Butternut Squash Soup

1 onion
2 Tbls butter
1 large butternut squash (peeled and squared)
6 cups of chicken or vegetable stock
1 cup chopped celery
1 cup chopped carrots
nutmeg
cinnamon
sea salt
pepper


Melt butter in a large soup pot. Dice onion and saute in pot.
Add stock, squash, carrots, and celery. Simmer for about 45 mins. or until squash is soft.
Remove squash, carrots, and celery from pot. Puree in blender until smooth. Return to pot.
Add spices to taste.
Serve up with fresh bread and salad.
This will make enough soup to freeze half.
