Jessica Seinfeld has a book called Deceptively Delicious, which kind of sneaks veggies into foods so that the kids don't they're eating veggies. There's also the book "The Sneaky Chef: Simple Strategies for Hiding Healthy Foods in Kids Favorite Meals". Both of them have similar ideas. Good luck!
I have a son who eat most of his veggies so luckily I don't have to refer to these books much but I still do anyway from time to time. I have both. Some things I do are put carrots (ground up in food processor really fine) in his cream cheese. He doesn't really know the difference! You can do it w/ a lot of veggies and prob get away with it. Carrots in mac n cheese is another big one but they both have recipes in there for that. I hate to say it but somtimes it takes bribery (what I said I'd never do before becoming a parent) but it works much of the time. You can make smoothies w/ your juicer if she'll eat fruit & sneak in some veggie 'juice' that way. So make a strawberry-banana one w/ pureed veggies! Good luck!
