Hello! I've been making this recipe since I was a little girl helping my mom. She's a retired Home Ec teacher and always used this recipe for her students at Christmas to make gifts for their family. Here goes:
Easy Microwave Fudge:
1/2 bag of powdered sugar 4 heaping Tabl Sp cocoa 1 stick margarine 1/4 c milk 1 tsp vanilla crushed nuts of your choice
Mix well the first 2 ingredients in a large microwave safe bowl. Make a small hole in the middle of the sugar and cocoa with a spoon. Pour milk into the hole and then place stick of margarine in the hole. Do not stir in the last 2 ingredients!! Micorwave for 2-3 minutes on high until margarine has melted. Mix well. If too runny, add more powdered sugar and mix. Then add 1 tsp vanilla and nuts. Pour onto a greased dish to cool. As it cools, it will solidify a little more. This makes a nice creamy fudge without the grainy texture that sometimes comes from homemade fudge. Good luck! If you use this recipe, let me know what you think! Thanks, Karinn |

Lea, here is the one I use. I got it from my husbands grandmother. She used it for many many years before she passed. It is really good. I just don't use the nuts, because of Garrett's allergies to them.
Granny fudge
3/4 cup (1 1/2 stick) margarine or butter 3 cups sugar 2/3 cup evaporated milk 1 pkg. (12 oz.) Semi-sweet Chocolate chips 1 jar (7 oz.) Marshmallow cream 1 cup chopped nuts (optional) 1 tsp. vanilla
Lightly grease 13x9" or 9" square pan. Mix margarine, sugar, and milk in heavy 2 1/2 to 3 quart saucepan; bring to full rolling boil on medium heat, stirring constantly.
Continue boiling 5 minutes on medium heat or until candy thermometer reaches 234 degrees, stirring constantly to prevent scorching.
Remove from heat. Gradually stir in chocolate chips until melted.
Add remaining ingredients. Pour into prepared pan. Cool at room temperature until cool. Cut in squares

Hi Lea! I have the best Peanut-butter Fudge Recipe that was my Aunt's recipe. It is HEAVENLY and even I have been able to make it with great success!!
2 cups granulated sugar 2/3 cup milk 1 cup marshmallow creme 1 cup peanut butter, creamy or chunky 1 teaspoon vanilla
Boil sugar and milk in a medium saucepan, stirring occasionally, to soft ball stage*, or about 236° on a candy thermometer. Remove from heat and stir in remaining ingredients. Pour candy into a greased 8x8-inch pan and chill. Cut peanut butter fudge into squares when cool and firm.
*To Test for Soft Ball Stage A small amount of syrup dropped into chilled water forms a ball, but is soft enough to flatten when picked up with fingers (234° to 240°).

It's not the easiest, but it's soooo good. I'm a huge fan of oreo mint chocolate, so I experimented with Oreo Mint Fudge. It's really good, the only thing you have to be careful with is how many oreos you put in. Too many and it dries it out. http://www.opensourcecook.com/cookbook_files/Mint_Oreo_Fudge-276.html |
