"Cooking Oils"
Just recently my nephew died at the age of 25 due to his heart. Part of the problem was obesity. My brother died a couple years ago (age 44) due to his heart giving out, but he too was obese and had diabetes. My father recently passed away due to complications from Diabetes.

Diabetes came knocking on my door one year ago. Afraid of being a fatality, I immediately changed my eating patterns the day I received the news. Not only did I do it for me but also my entire family. It's been one year now, and I am glad to say, Diabetes has not returned. I am eating healthier than I have ever eaten in my life.

I use "coconut oil" when baking. I have heard pros and cons about this oil. Have you heard anything?
I have also used "jojoba oil". It can cook at high temperatures. But I found the flavor to be flat.
I use "sesame oil" when I saute, or use as a marinade for grilling.
I use "Extra Virgin Olive Oil" for cooking.

Having said all that, I have been cooking and experimenting with various "cooking oils" and wanted to know what are your thoughts or recommendations when it comes to preparing foods for yourself or your kids.

Kellie, you bring up a good point about diabetes. I think most people don't know that not only can it be prevented with diet, but also controlled.

I prefer olive oil for most uses. I don't like coconut oil because of the taste. I have heard good things about canola oil but haven't tried it yet.

I use olive oil as well, for most things. I have heard of subsituting applesauce for oil when baking but I haven't tried that yet. We sometimes use canola oil, but I do know that extra virgin olive oil is the best. I also know that Weight Watchers encourages you to take flaxseed oil everyday. It's a healthy type of oil that your body needs to keep things moving and you can put it in oatmeal, yogurt, etc. My sister got that idea and it worked well for her, so I might try it as well. It seems weird to add oil to something on purpose, but even Dr. Oz from Oprah says it's good for you!

I am using Canola oil. Not that often, but we do use it. You're right. One can eliminate Diabetes, if one just changes their eating patterns.

As for the Flax Seed Oil-it is excellent. It is an excellent source for Omega 3-fatty acids,and overall good for your health. I include it in my morning shake. You can also include Flax Seed Oil in your own homemade salad dressing.

You will have to acquire a taste for Flax Seed Oil. It took me a while to get used to.

I have substituted "oil" for "applesauce". It is so rich and fluffy. I make muffins for the kids, and they really enjoy the flavor. I have included it in my banana muffins.

I use olive oil and canola oil now. I never use Vegatable oil i heard not such good things. I have always heard good about olive and Canola.

I agree, Vegetable Oil is not that healthy for you. Here is the recipe:
Banana Muffins

2 Cups all purpose Flour
2 tsps. baking powder (teaspoon)
3/4 tsps. salt
1/4 baking soda
4 tablespoons oil
1/2 cup applesauce (unsweetened)
1/2 sugar
2 eggs
3 medium ripe bananas, mashed
1/2 cup chopped walnuts/pecans (optional)

Pre heat oven 350degrees, line muffin pan with muffin tins or cooking spray to prevent sticking. (I line mine with parchment paper)

In a large bowl, mix the flour, baking powder, salt, baking soda, set aside.
Place mashed bananas in a bowl, and whisk in the oil, applesauce and sugar.
Add the banana mixture to the flour mixture and whisk until blended. Do not over mix-mix it up too much-you want to have a thick consistency. Add nuts if you want.
Spoon into muffin tins. ( i use my measuring cup when dropping in muffin tin) Fill them almost full, enough room to let them rise. Cook for 20-25 minutes or until golden brown. Cool on a rack. Can kept frozen for up to 2 weeks.

I use mostly olive oil and have used canola oil for years. But lately I have been hearing bad things about that oil like it is very highly processed. Who knows what to believe. I have stopped using canola and started using a very light veggetable oil for the few things that taste bad with olive oil. I usually end up tossing it out because it goes rancid before I use it all. I think olive oil is supposed to be really good for your health and it tastes great except in baked goods.

"Canola oil is very low in saturated fat and has a very high proportion of monounsaturated fat. So, it is a healthy choice when it comes to oils", according to Mayo Clinic dietitian Katherine Zeratsky, RD,LD.

I do not use Vegetable Oil at all. I majority cook with Olive Oil, but, every now and then I like to experiment and seeing what the kids enjoy or notice any flavor for that matter.

Off the subject her, I only thought it was 100+ in my area. I did'nt know in NJ it gets that hot too. All my baking is done in the fall, when the weather cools down. Banana muffins is one of our favorites

I use canola oil, but I think any oil is ok to use with kids. You need to balance what kids eat with exercise. I have 7 kids and none of them are overweight. We live in a rural area. The 5 that can swim all belong to the local swim club and swim in the summer months. In winter they play outside with each other and myself, kicking the ball, running and jumping on the trampoline. A few play soccer and football with the local clubs too. We eat meat and veges/salad every night during most of the year. During summer, when we finish swimming late, they eat quick meals like home made pizza, pies, fried food & pasta as well as meat and veges, because they exercise so much with swimming, they burn off what they eat.

Thank you for your positive input. My daughter was premature, and does not have one ounce of fat on her. My son is not overweight, and is going thru a growing spurt. So, I am always cooking or I like to have prepared cooked meals rather than the junk food he will find outside the home. I go to a gym every morning at 5:00am. I work out for an hour, then during the day I will swim in our pool with our young daughter, and in the late late evening, I will walk my dogs.

You are correct, Diet alone will not help you. Exercise helps too. Thank you.
