July 4th feast
This meal will feed about 8-10

Apetizers- Armadillo Eggs
10 fresh Jalapenoes
1-8oz cream cheese
1-pkg bacon your choice I like maple
Cut the all Jalapenoes in half and gut them. Fill them with the cream cheese. Cut all the strips of bacon in half to make 20 so use 10 pieces. Wrap the bacon around the cream cheese filled Jalapeno and to keep the bacon in place use a toothpick. After all of the eggs are wrapped I sprinkle them with Tony's seasoning and pepper your choice. Place them on the grill before you are ready for the meat.

Potato Salad
3-lg potatoes peeled and cubed and cooked
4-hard boiled eggs
2 tbsp relish your choice sweet or dill I use dill
miricle whip to moisten potatoes usually about 2 cups
mustard to taste
1 green onion chopped
1 tsp thyme
1 pinch of sugar

For the kids we do hamburgers and hot dogs. For the adults we do a grilled chicken which can also be done in the oven if you don't like to grill or have one.

Rubbed yard bird
1 lg chicken or you could even use a turkey
2 tbsp garlic powder
1 tbsp season salt
1 tbsp chilli powder
1/2 tbsp dry mustard
1 tsp cumin
1/2 tsp thyme
1 pinch of sugar
1 tiny pinch of nutmeg
Mix all the dry ingredients in a small bowl. I rub the bird down with butter and then I rub it down with all the dry ingredients. There is not a lot of dry ingredients so a little bit goes a long ways. We use one of those beer can chicken stands and sometimes use a beer or a soda to give a little extra flavor. Every once in a while I will stuff it with lemons or oranges. Your bird your choice. Cook until done it usually takes a few hours so leave plenty of time.

I have heard if you are pregnant or breastfeeding DO NOT use thyme. I don't know why but I thought I would pass that on.

Sex on the beach (I did not make up the name)
1 box white cake mix
make the cake the way the box says to
After the cake is done let cool for 1-2 min not long
poke holes in it I use a fork
in one half of the cake I poor pineapple icecream topping
and in the other half I poor strawberry ice cream topping
I put that in the fridge and let cool completely
When it is cooled I top with cool whip and then since it is the fourth you can make your own little decoration with fruit if you want. I usually just put strawberries on it.

Ice cream syrup
2 cup fresh fruit what ever you like
1 stick of cinnamon
1 tsp vanilla or almond you choice
1/4 c water
1/2 c splenda or sugar your choice
in a medium size sause pan cook all together and when the fruit is completely cooked down I put in cornstarch to make it a thick syrup. I put this over vanilla ice cream or vanilla frozen yogurt.

I hope you all enjoy this meal we sure do. If you have any questions please let me know.
