Ideal for a light meal, an appetizer or a savory breakfast.
INGREDIENTS
for 4 persons
• 8 Oz of fresh green asparagus
• 8 eggs
• 2 sprigs of fresh chopped parsley
• 2 sprigs of fresh chopped tarragon
• 3 tbsp olive oil
• Salt and pepper
• grated cheese
• Preparation : 5 minutes
• Cooking : 15 minutes
INSTRUCTIONS
1- Remove the tough ends of the asparagus and cut in half.
Cook in boiling salted water for 10 minutes.
Drain and rinse with cold water. Let sit.
2- Break the eggs into a large bowl and beat with a pinch of salt and pepper.
Add tarragon and parsley and mix well.
3- Heat the olive oil in a pan and pour in eggs.
Stir with a wooden spatula until the eggs are scrambled.
Sprinkle with grated cheese.
4 -Mix the eggs with asparagus reserved. Serve hot.
