2 lb zucchini
oil olive
beef stock cube
pepper
mixture of herbs for salad

INSTRUCTIONS
1- Peel the zucchini (they will be less bitter for children). Cut into small dice.
2- In a skillet or wok put a drizzle of olive oil (very little) and saute the zucchini over high heat, stirring often, for 5 minutes.
3- While cooking zucchini, crumble a beef stock cube over and pepper, sprinkle generously with herbs, do not add salt (the stock cube will salt the zucchini).
4 -After 5 minutes of cooking off the heat, cover the pan and allow to finish cooking for 10 to 15 minutes and it's ready!
