INGREDIENTS
2 tsp olive oil
2 medium zucchini, cut into 1/4 - 1/2 inch slices
1 tsp dried oregano
2 Tbsp parsley, fresh, chopped
1/8 tsp salt (or to taste)
1/8 tsp pepper (or to taste)
1/4 cup crumbled feta cheese
INSTRUCTIONS
Heat the oil in a large skillet over medium heat. Add zucchini and oregano. Saute until zucchini is golden brown, about 4-6 minutes.
Reduce heat to low and add parsley, salt, and pepper. Toss to combine. Sprinkle feta cheese over top and allow cheese to just slightly melt (this will happen quickly). Serve.
