This is the recipe we enjoyed at Chrissy's cooking class.
INGREDIENTS
4 large or 8 small croissants
1/2 to 1 cup halved grapes
1 stalk celery, diced small
1 tsp chopped chives
2 tsp lemon juice (or half a lemon)
2 cups leftover chicken, chopped (she used white meat)
3 green onions, diced
1/4 cup pecan pieces, toasted
1/2 tsp curry powder
1/4 cup mayonnaise
INSTRUCTIONS
Mix all ingredients in a medium mixing bowl. Salt and pepper to taste. Cut open croissants and fill with chicken salad.
