This recipe is so easy because you just throw everything into the food processor. I serve this over the tomato/basil/mozzarella toothpicks you may have seen me make for some of the MNOs. You could add it to pasta, use it as a sauce on pizza, dip bread into it, or toss it with fresh tomatoes.
INGREDIENTS
2 cups fresh basil
1 cup fresh Italian parsley
1/2 cup Parmesan or romano cheese, grated
1/2 cup pine nuts, toasted
4 garlic cloves, roughly chopped
1/4 teaspoon salt
1/8 teaspoon red pepper flakes
1/2 cup olive oil
1 tablespoon lemon juice
2 tablespoons water
INSTRUCTIONS
Combine all ingredients in a food processor or blender. Puree until the mixture forms a smooth, thick paste.
This is a recipe that tastes better as it sits in the refrigerator. So it's actually good to make it ahead of time!
