MANICOTTI WITH CHEESE
MANICOTTI WITH CHEESE

Makes: 6 to 8 servings
INGREDIENTS
1 package (8oz) Manicotti uncooked
3 - 1/2 cups (two 15oz containers) part-skim ricotta cheese
1 cup (4oz) shredded part-skim mozzarella cheese
1/4 cup grated parmesan cheese, divided
2 tablespoons chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1-1/2 cups (about 14oz jar) spaghetti sauce
INSTRUCTIONS
cook pasta according to package directions
in large bowl, stir together ricotta, mozzarella, 2 tablespoons Parmesan cheese, parsley, salt and pepper; spoon into pasta tubes
heat oven to 375
spread 1/2 cup sauce on bottom of 13x9x2-inch baking dish; arrange filled pasta in a single layer over sauce
cover with remaining sauce and Parmesan cheese
cover with foil
bake 35 minutes or until hot and bubbly
