Sauteed Zucchini with Oregano and Feta
This is a Weight Watchers recipe. The point value is 1 point per serving,
Great for: Low Fat, Quick and Easy
Courses: Side Dish
Main Ingredients: Cheese, Vegetables
INGREDIENTS
2 tsp olive oil
2 medium zucchini, cut into 1/4 - 1/2 inch slices
1 tsp dried oregano
2 Tbsp parsley, fresh, chopped
1/8 tsp salt (or to taste)
1/8 tsp pepper (or to taste)
1/4 cup crumbled feta cheese
INSTRUCTIONS
Serves 4.
Prep time: 7 minutes
Cooking time: 6 minutes

1. Heat the oil in a large skillet over medium heat.

2. Add zucchini and oregano. Saute until zucchini is golden brown, about 4-6 minutes.

3. Reduce heat to low and add parsley, salt, and pepper. Toss to combine.

4. Sprinkle feta cheese over top and allow cheese to just slightly melt (this will happen quickly).

5. Serve.
